Why Built-in Oil Filtration Matters

For any kitchen that fries in volume, cooking oil is one of the largest recurring costs. As oil breaks down, it absorbs more food particles, turns darker, and transfers off-flavors to every batch - forcing operators to discard oil earlier and more often. A built-in filtration system solves this at the source: by filtering oil after each shift or between batches, it keeps oil cleaner for longer, reduces waste, and helps kitchens maintain a stable, repeatable fry quality day after day.

The FM Design series is built around the daily realities of a busy fry station. The programmable panel stores up to 10 menus, so operators can switch between fries, chicken, fish and other items without re-setting temperatures or timers. Fry baskets lock back when not in use to free up counter space, and the heating tube lifts up for quick access to the tank bottom - making daily cleaning faster and reducing the risk of carbon buildup that shortens oil life.
